Weight and volume are in ounces, so for cheese use
the following.  8 ounces of cheese is 2 cups, 4 ounces is 1 cup,
and that is shredded (soft cheese).  
Cream Cheese - ounce = 9 tsp, 8 oz = 1 1/2 cups
chocolate   1 ounce bitter  = 1 square
chocolate   4 tablespoons cocoa plus 2 teaspoons butter = 1 ounce of bitter
corn flakes   8 oz = 8 cups
cornstarch   1 tablespoon  = 2 tablespoons flour for thickening
egg whites 1 cup  = 8 to 10 whites
egg yolks 1 cup  = 12 to 14 yolks
flour sifted all purpose 4 cups   = 1 pound
