Baking Potatoes

 

Clean well and use a fork to make vents every inch on top.
For soft skin, wrap in foil, but this is steaming and will not make true baked skins.
Avoid any with green tinted skins, check at store, sometimes the store lights
will cause the normally sun damaged effect, do not use in either case.
 
Since cooking is usually with another item, adjust cooking as follows-
45 minutes at 400F
60 minutes at 350F
90 minutes at 325F
As with baking bread and most cooking, 
reduce temp by 25 degrees for convection ovens,
convection may require a foil tent to stop from skin burns, 
depends on oven.

The best way is cook to 210F with a digital probe

For soft skin, brush with butter when finished cooking.
