Whoopee Pies
Gram Owens
2 3/4 * Cup Flour
1 Tsp Baking Powder
1 Tsp Salt
1/2 Cup Cocoa Powder (dissolve in hot water)
1 1/2 Cups Sugar
1 Tsp Baking Soda  
1 Cup Hot Water
1/2 Cup Shortening (same as 8 Tbl)
1/2 Cup Sour Milk (add tsp Vinegar)
2 Egg yokes
1 Tsp Vanilla
 
 
Mix  Flour, Baking Powder, Salt, Baking Soda, Sugar.
Mix Cocoa Powder with Hot Water, then add to dry.
Mix in the remaining and spoon on parchment paper, 
same as making cookies. Bake 350 for 10 - 20 Minutes.
Top will spring back when touched or toothpick test for clean. 

Filling-

 

2 Egg Whites
1/2 Cups Shortening (same as 8 Tbl) **
2 Cups Powdered Sugar
1/8 Tsp Salt
1 Tsp Vanilla
  2 TBL Milk - add enough to make smooth and fluffy    
 

* 3 cups or batter is too thin

**Sub peanut butter or unsalted butter for 1/2 cup of shortening, if desired

 

Mix on high for 15 minutes, DO NOT SHORT TIME THIS!!!
 
After outsides are cool, spoon filling between two above cookies
 
The shortening was Crisco white, zero trans fat Crisco is fine for cookie, 
but for the filling it is far better to use Hi Ratio Baker's Shortening.
 
Dough texture should be like pancake batter, flows some but no ridges.
