Blueberry Cake
2 Eggs - separated
1 CUP Sugar
1/2 CUP Shortening or 1 stick oleo
1/4 TSP Salt
1 TSP Vanilla
1 1/2 CUP Flour
1 TSP Baking Powder
1/3 CUP Milk
1 1/2 CUP Blueberries - frozen, dust with flour

Beat two egg whites until frothy, add 1/4 cup of sugar and beat stiff.

Cream shortening, add salt and vanilla.  Gradually add the rest of the sugar.

Add 2 yolks and beat until creamy, slowly mix in flour/baking powder.

Fold whites and blueberries in.

Bake 350F for 45 to 50 minutes.
