Lemon Bars
1 CUP Flour
1/4 CUP Powered Sugar
1/2 CUP Butter - chilled
2 Eggs
1 CUP Sugar
2 TBL Flour
1 TBL Lemon peel - grated
1/2 TSP Baking Powder
2 TBL Lemon Juice

Heat oven to 350F.

In a large bowl, combine flour, powdered sugar, cut in butter until crumbly.

Press into a 8x8 pan.  Bake for 15 minutes.

In a small bowl, beat eggs and sugar until light colored, stir in remaining items.

Pour egg mix over baked crust.

Return to oven and bake 18 to 25 minutes, until light brown.

Cool completely and sprinkle with powered sugar (Optional).
