Marshmallows Squares

 
13x9 pan use-
2 Cups Sugar
1 1/3 Cups Crisco Shortening (about 21 TBL for easy measuring)
3/4 Cup Coconut
2 TSP Vanilla
4 Eggs
 
1 Box of Graham Crackers - Crushed*
4 Cups Mini Marshmallows
 
8x8 pan use-
1 Cups Sugar
2/3 Cups Crisco Shortening (about 11 TBL for easy measuring)
1/4 Cup Coconut
1 TSP Vanilla
2 Eggs
 
2 Cup of Graham Crackers - Crushed*  (1/2 box not honey made)
2 Cup Mini Marshmallows
 
 
Mix first 5 ingredients in double boiler
cook for 1 hour  -  Stir often - Zero tans fat may take 1/2 hour 
or less- cook until sugar is dissolved -
should be thick and golden color when finished.
 
Cool so marshmallows do not melt when added
 
Mix crackers and minis, then stir in sauce.
Use gloves, makes it easier
Press into 9 x 13 or 8x8 pan and refrigerate.
 
 
* Use regular graham crackers, not flavored, and crush
   with a rolling pin (or 2 liter soda bottle). The 
   pre-crushed are too fine and will make nearer 
   to a fudge. 
 
If you make cheesecakes as well, pickup a cracker masher,
does the best on crackers. 

For a new type, melt chocolate chips in a double boiler and pour on top.
