Pineapple Cookies
1 1/2 Cups Brown Sugar
2 Eggs
2/3 Cup Shortening
2/3 Cup Pineapple, crushed and drained
1 Tsp Vanilla
1/2 Tsp Lemon Juice
3 Cups Flour
2 1/2 Tsp Baking Powder
2/3 Cup Walnuts, chopped
1/2 Tsp Salt
Preheat oven to 350F.
In a large bowl, combine first three ingredients, blend well.
Stir in remaining ingredients, blend well,.
Drop by rounded teaspoons, 2 inches apart onto parchment paper
lined cookie sheet.
Bake 15 to 20 minutes or until brown.  Remove from pan and rack cool.
