Broccoli Quiche

Broccoli -wash, remove stems. Cut into small pieces.
Boil for 5 minutes with 1/4 tsp Marjoram in covered pan.
 

Crust

1 CUP Flour
1/2 TSP Salt
1/3 CUP Shortening (Lard is better)
3-4 TBL Cold Water
 
In a medium bowl mix flour and salt. Then cut in shortening to size of small peas.
Sprinkle with water and mix with a fork until dough stays together. Line into pie pan.
Bake at 425F for 7 minutes, remove from oven and reduce oven to 350F
 
1 Small Onion - chopped fine and sautéed
3/4 LB Broccoli from above
6 OZ Shredded Cheddar Cheese (1 1/2 CUP)
2 Eggs
1 TBL Flour
1 TSP Parsley
1/8 TSP Garlic Granules
1/4 TSP Pepper (Cayenne for spicy)
1 CUP Cream - light to medium
 
Dry the broccoli and onion, then place on crust, sprinkle on the cheese.
Beat eggs then add flour, parsley, garlic, and pepper, then blend into cream.
Mix well and pour into pie.
Bake at 350F for 30-35 minutes or until knife in center is clean.
Cool 5 - 10 minutes before slicing.
