Panko  Scallops 
 
scallops- remove hinge (if smell like fish-do not use)
2 eggs
1/4 cup milk
3 cup Panko
1 cup flour
Oil for 1/4 inch in frying pan
 
 
Paper towel scallops dry and dust with salt/pepper, if desired.
 
Beat eggs and add milk, beater smooth.
 
In another bowl, pour flour.
 
In another bowl, pour Panko 
 
Dip scallops, 1 at a time, in flour, then in egg mixture and then in Panko, 
turning to coat, and place in medium heated pan with oil.
 
(standard three bay coating, best to use one hand for wet and other for dry) 

Fry until browned, about 2-3 minutes per side, drain on paper towel.
