Lemon Pudding
Mary Birt
1 Pint Water
1 CUP Sugar
1 TSP Butter
2 Eggs - separated
1 Lemon
2 TSP Cornstarch

Heat water in double-boiler, then add all ingredients except egg whites.

Cook until thick, add more cornstarch if not thickening. 

Beat egg whites to stiff, then fold into hot mixture until light and fluffy.

Let stand and cool.
