Tapioca Pudding
1/3 CUP Small Pearl Tapioca
1/4 TSP Salt
3 CUP Milk
2 Eggs - beaten
1/4 CUP Sugar
1/2 TSP Vanilla

Soak tapioca pearls in water for one hour and drain.

Combine tapioca, salt, and milk in a 2 quart pan.

Bring to a boil, stirring constantly, then lower heat and simmer 5 minutes, do not cover.

Add sugar to beaten eggs, then slowly pour tapioca into sugar and egg, stirring constantly.

Return to lowest heat and cook 3 minutes, add vanilla, and chill.
